Asian Chicken Salad

Asian Chicken Salad

(serves 5-6)

 First make the dressing, by combining the following ingredients in a glass shaker jar:

1/3 cup olive oil
1/4 cup white wine vinegar
1 tablespoon white sugar
2 teaspoons soy sauce
1 ½ teaspoons ginger juice -or- ½ teaspoon ground ginger
1/2 teaspoon black pepper
1/4 teaspoon sea salt

Shake ingredients together. Refrigerate until ready to use.


Salad ingredients:

1 head romaine lettuce, rinsed and torn
2-3 chicken breasts, cooked and shredded
1 medium carrot, shredded
4 green onions – white and green parts - sliced
Toasted sesame seeds, for garnish

Divide salad ingredients evenly among four plates. Serve with dressing.
